We stock a wide range of superior quality barrel-aged, white and blends of balsamic vinegar. Our producer in Modena, Italy is exclusively dedicated to small batch production of this unique and inimitable product, respecting traditional values, using proprietary methods, recipes and only Italian selected local supplies.
Our infused olive oils are produced in the same manner sourced in central Italy using only higher quality extra virgin oils as a base. Small batched produced and bottled which gives you fresher and healthier product.

BARREL AGED BALSAMIC VINEGAR
"Grape must" (in Italian, "mosto"), the sweet juice of freshly crushed/juiced grapes — then boiled to a concentrate, fermented and acidified. The must inside the barrels loses about 10% of its volume every year due to evaporation. Because of this, the vinegar becomes more concentrated. After that, it is transferred to progressively smaller barrels made of different species of wood which will contribute to giving a characteristic aroma to the final product.
It takes years and years to achieve our exceptional balance in fragrance and outstanding flavor.
It all starts with the trebbiano and lambruschi grapes and an family acetaia dating back to 1905 in Modena, Italy. (And is still working and producing). Over time it has remained faithful to the production of aged and high density vinegars, distinguishing themselves as Masters both home and abroad; dedicated exclusively in the production of Balsamic Vinegar. They are sensitive to issues of environmental and social sustainability. The production processes are totally powered by solar energy.
